Lunches from home
As a small business owner, I have a home office and spend most of my day working from my house. It's so much easier and cost efficient to do meal prep and cook from home. So today, I'm bringing you the college student and business owner approved lunch. It's yummy, it's filling, it's healthy, and vegan!
After starting the Weight Watchers diet, I've started to be more mindful about what I'm eating. Weight Watchers is more of a lifestyle change than a diet. Instead of changing everything you eat, you just balance it with healthy food instead. I love it because it's incredibly convenient! As you walk through the grocery store, you can easily scan the food you're choosing to see if it's low or high in points. I like this aspect of it because it's incredibly eye-opening. You can see how healthy or unhealthy things are and make the best decision on whether you want to buy it or not. It's a health lifesaver! I went to the grocery just a few days ago and stocked up on lots of low point foods. I'll be sharing those in future blog posts! My goal is to really make these my own and add new ingredients here and there.
Today, I made riced cauliflower and Asian vegetable medley. The best part about these are that the entire meal was only 6 points! It made a huge meal and was so stinkin' good. It was super filling, plus it's vegan for all our friends who live that super healthy life. You can find everything I used in the frozen food section.
First, I heated pan-fried the cauliflower rice in a skillet and cooked it for about 6-8 minutes. I wanted to keep it super low point, so I just added soy sauce to the pan. If you wanted to take it to the next level and make it like a Chinese-style fried rice, you could always add a whisked egg to the pan along with one to two tablespoons of butter. I heated up the the veggies in the microwave and then mixed everything together. After everything was heated together, I added a few extra dashes of soy sauce.
